Coconut White Chocolate Pudding Cookies

I think what I love about pudding cookies, besides how yummy they are, is how perfectly they turn out. I love coconut and these coconut pudding cookies are even more delicious with the additon of white chocolate chips and lots of coconut. My only problem with these cookies however, is that you can't just eat one or two! Just warning ya!

3/4 cup butter

3/4 cup brown sugar
1/4 cup sugar
1 (3/4 oz.) pkg. coconut creme instant pudding
2 eggs
1 tsp. vanilla extract
1 tsp. baking soda
2 1/4 cups flour
1 cup shredded coconut
