Confetti Corn Chowder

Summer is the best time to make this soup when corn is in season. Cut it off the cob and then scrape the cob with the flat of your knife to release the " corn milk". I swap out turkey bacon when I want to cut down on the fat.

6 slices of (turkey)bacon chopped
1 large onion, diced
2 red bell peppers, seeded and diced
1 1/2 cups diced celery
2 pounds frozen corn, defrosted
3/4 cup flour
8 cups chicken stock
1 cup fat-free half and half
2 cups 1% milk
1 1/2 cups each of reduced fat shredded jack and cheddar cheeses
several dashes of tobasco sauce
1 tbs olive oil(if using turkey bacon)
1/2 cup sliced green onions
