This Copasetic Carrot Cake recipe was given to me by a friend, who snagged it from a random magazine. On the page read these words:

Ingredients {cake}:
1 cup flour
1 cup sugar
1 tsp cinnamon
1 1/2 baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup vegetable oil
3 eggs
2 cups grated carrots
1 cup chopped nuts
Ingredients {icing}:
1/4 cup butter, soft
4 oz. cream cheese
1 1/2 cups powdered sugar
1/2 tsp vanilla
Stir into a big bowl the first 6 ingredients well. Add the vegetable oil and eggs and stir well. Add the grated carrots and chopped nuts and stir well. Wipe some butter around a cake tin/pan and pour batter...
