I love this dish, especially in the winter served with mash potatoes. I have tried numerous ways to make dish and this way is the fastest and much tastier. Rather than using red wine I used white wine, a really good wine that you can drink with this dish.

6 chicken thighs with skin on
150g diced bacon or lardons
5 shallots, peeled
Few fresh thyme sprigs
1 rosemary sprig
3 tbsps. Olive oil
1 glass of good white wine
Knob of butter
350g of button mushrooms
1 tbsp. garlic and ginger paste
Salt & pepper
Small handful of fresh chopped parsley
150g diced bacon or lardons
5 shallots, peeled
Few fresh thyme sprigs
1 rosemary sprig
3 tbsps. Olive oil
1 glass of good white wine
Knob of butter
350g of button mushrooms
1 tbsp. garlic and ginger paste
Salt & pepper
Small handful of fresh chopped parsley
