Corn & Cucumber Salad w/ Cilantro Vinaigrette

Quick & easy summer salad

1 can of corn (or fresh grilled)
2 cups grape or cherry tomatoes, red & yellow, cut in half
2 Tbsp. chopped red onion
1 1/2 cups chopped/diced English cucumber
Crumbled feta (optional)

Dressing:
6 Tbsp. olive oil
2 Tbsp. Cider vinegar
1 tsp. garlic powder
2 Tbsp. fresh cilantro, chopped
1/2 tsp. salt
dash of pepper
Combine all non-dressing ingredients in a large bowl. Refrigerate. Add all ingredients for dressing to a jar with a lid. Shake really well. When ready to serve salad, add the dressing and toss.

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
