Corn & Cucumber Salad w/ Cilantro Vinaigrette

Quick & easy summer salad

1 can of corn (or fresh grilled)
2 cups grape or cherry tomatoes, red & yellow, cut in half
2 Tbsp. chopped red onion
1 1/2 cups chopped/diced English cucumber
Crumbled feta (optional)
Dressing:
6 Tbsp. olive oil
2 Tbsp. Cider vinegar
1 tsp. garlic powder
2 Tbsp. fresh cilantro, chopped
1/2 tsp. salt
dash of pepper
2 cups grape or cherry tomatoes, red & yellow, cut in half
2 Tbsp. chopped red onion
1 1/2 cups chopped/diced English cucumber
Crumbled feta (optional)
Dressing:
6 Tbsp. olive oil
2 Tbsp. Cider vinegar
1 tsp. garlic powder
2 Tbsp. fresh cilantro, chopped
1/2 tsp. salt
dash of pepper
Combine all non-dressing ingredients in a large bowl. Refrigerate.
Add all ingredients for dressing to a jar with a lid. Shake really well.
When ready to serve salad, add the dressing and toss.
