I LOVE to serve these with a little bowl of pancake syrup on the side for dipping!! You can make these into little ball fritters or you can make them into flat pancake fritters. Whatever floats your boat!

1 cup pancake mix
1 beaten egg
1/4 cup PLUS 2 TBL milk
1 can whole kernel corn drained
2 cups canola or vegetable oil; for frying

2 cups canola or vegetable oil; for frying
1. Combine pancake mix, egg, milk and corn until well blended. (sorry to break up the milk, but it should be 1/4 cup plus 2 TBL milk altogther, software won't let me add it like that)
2. Heat oil for frying. Drop by tablespoon in to heated canola oil, flip when set (like a pancake does) to brown other side.
3. Drain on paper towels and serve! I like to serve them with a little pancake syrup for dipping
