8 (6-inch round) flour tortillas
5 large eggs
3/4 cup sour cream
1/2 teaspoon ground white pepper
3 teaspoons Dijon mustard
2 cups shredded Gouda cheese, plus 1/4 cup
1/2 cup diced green bell pepper
1/4 cup diced onion
1 tablespoon fresh parsley for garnish
