Easy, summery side dish!

3 to 4 cups eggplant, (cut into 1-inch cubes, with or without skin, your preference)
1 1/2 to 2 Tablespoons olive oil
1/4 cup whole wheat flour
1/4 cup cornmeal
2 teaspoons paprika
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
