The ingredients work so well together that they create an incredibly delicious side dish.

1- 16 ounce container low fat cottage cheese
1- 10 ounce package frozen chopped broccoli, thawed and well drained
3/4 cup shredded cheddar cheese
1- 7 ounce jar roasted red peppers, well drained and chopped
4 eggs, beaten
3 tablespoons grated Parmesan cheese
3 tablespoons plain dry breadcrumbs
