County Fair Funnel Cakes

These taste just like the ones you get from your local county fairs!

Vegetable oil for deep frying
3 eggs
1 c. milk
2 c. all-purpose flour
1 to 2 T. sugar
1 t. baking powder
1 t. vanilla
¼ t. salt, optional
Pour about 1 to 1½ inches oil into an electric skillet and heat to 375?. Meanwhile, beat eggs, milk, flour, sugar, baking powder and salt together in a large bowl until smooth. (A whisk works well). When oil is hot, fill a large funnel, holding forefinger over open end, with batter. Remove finger and let batter fall into the center of the skillet, moving funnel in a spiral to make an 8 or 9 inch round. Cook until golden. Remove cake with slotted spatula and place on paper toweling. Sprinkle immediately with powdered sugar or drizzle with maple syrup.

1 cup Avocado ( Or 1/2 of an average-sized avocado )
1 cup Pineapple ( Don't add the pineapple bark into the mix )
1 cup Banana ( Without the peel )
1 slice Ginger
1

1. Place all ingredients into a blender
2. Add water until it reaches 3/4 of the cup
3. Blend for 30 seconds
