Cranberry Breakfast Cookies

1 1/2 c. rolled oats
1 c. unsweetened coconut flakes
1 tbsp. ground flaxseed
1/4 c. sunflower seeds
1 tsp. cinnamon
1/2 tsp. salt
3/4 c. coarsely chopped pecans
1/2 c. dried cranberries (or any type of dried fruit: apples, blueberries, etc.)
3 very ripe bananas, mashed
1/4 c. coconut oil, warm enough to be liquid
1 tbsp. honey
1 tsp. vanilla extract
Preheat oven to 350°. In a large bowl, combine all dry ingredients. Stir in mashed bananas, oil, honey and vanilla until well combined. Press 2 tablespoons of mixture into a 2 1/2-inch round cookie cutter...
