2 Medium boneless, skinless chicken breasts (pounded to 1/4 inch thick)
salt and pepper to taste
poultry seasoning to taste
1 tablespoon olive oil
1 tablespoon butter
2 Large shallots (chopped, divided)
1/2 cup dried cranberries (rough chopped)
4oz soft goat cheese
1 tablespoon fresh marcielle basil (chopped)
1/2 cup canned whole berry cranberry sauce
2 tablespoons white wine
