Crazy Frugal Cajun Seasoned Sausage with Beans and Rice

I started doing this particular dish years ago when money was tight and I had to figure out how to get a balanced meal on a dime. With a pack of sausage and a few “odds and ends” I came up with the basic idea and have been tweaking it ever since. My husband and children all love it when I make this meal. I love making it because it can be done all in one pan.

1- 500g package of Italian-Style Sausauge
2 cups of uncooked Rice
1/2 large yellow onion
2 chopped green onions
1 1/2 540 ml cans of diced tomatoes
1 227g package of white mushrooms
1/5 of a 750g package of frozen corn
1 can of red kidney beans or black beans partly drained
2 cups of liquid beef or chicken broth
1/2 tsp of red chilli flakes
2-3 tsp cajun spice mix1/4 tsp oregano
salt and pepper to taste
