Cream Cheese Apple Enchiladas

Tortillas filled with apples, sweetened cream cheese, and a sprinkle of cinnamon sugar. These dessert enchiladas are simple and easy!

2 cans (21 ounce each) apple pie filling
8 (8 inch) flour tortillas

1 teaspoon ground cinnamon
1/4 cup white sugar

8 oz. cream cheese
1/2 cup powdered sugar

3/4 cup butter
3/4 cup white sugar
3/4 cup brown sugar
3/4 cup water
In a small bowl combine 1/2 cup powdered sugar and cream cheese. In a separate small bowl, combine 1 teaspoon ground cinnamon and 1/4 cup white sugar. Spread about 2 tablespoons of the cream cheese mixture down the center of each tortilla. Spoon about 1/4 cup of the apple filling on top of the cream cheese down the center of each tortilla. Sprinkle each tortilla with cinnamon sugar. Roll tortillas up and place seam side down in a greased 9x13 baking dish. In a small saucepan bring butter, remaining 3/4 cup of white sugar, brown sugar and water to a boil. Reduce heat and simmer for 3 minutes, stirring constantly. Remove from heat. Pour sauce evenly over tortillas and sprinkle with extra cinnamon on top if desired. Preheat oven to 350 degrees. Let sit for 30 minutes before baking! Bake in preheated oven for 30 minutes. Serve warm with a scoop of vanilla ice cream or whipped cream.
