Creamy butternut squash soup with green apples

This is a very hearty soup. It is great for warming up in the winter, or for using up your fresh veggies from the garden in the summer. It has a very creamy texture from the cream cheese, and a sweet yet tangy flavor from the green apples and brown sugar.

4 T. Butter
1 large onion
2 cloves garlic
3 large tomatoes
2 jalapeños
2 bell peppers
1 large butternut squash
4 celery stalks
2 green apples
1 pumpkin beer
32 oz. water
8 oz. cream cheese
1-2 cups cheddar
1 cup brown sugar
1 T. salt
1 T. pepper
1 T. cinnamon
Basil leaves, chopped for garnish
Melt butter in a large pot. Add vegetables and simmer for about 10 minutes on medium heat, stirring frequently. Add beer and water and put a lid on the pot. Continue to simmer for 20 minutes. Add remaining ingredients and blend with an immersion blender until smooth. Serve with basil on top.
