Creamy Garlic Parmesan Mashed Potatoes
Mashed Potatoes are a side dish staple, but they can get a bit boring. This recipe adds some yummy ingredients to take your mashed potatoes to the next level.

8-9 medium red potatoes, quartered
½ tbs. garlic, minced
4 oz. light sour cream
½ cup Parmesan cheese, shredded
¼ cup skim milk
1 tbs. butter
salt and pepper to taste

Place the potatoes in a large pot with enough water to completely cover the potatoes and cook on medium-high heat.
Cook the potatoes until they can be easily pierced with a fork (about 10-15 minutes).
