Creamy Ham and Potato Soup

Creamy potato soup with ham and vegetables. All ingredients cooked in one pot. I put my celery, onion and carrot in my food processor and combine them that way. You can always chop them if you prefer the bigger pieces of vegetables.

3 stalks celery, chopped or shredded
1 carrot, shredded
1 medium onion, chopped or shredded
1/4 cup butter
8 medium potatoes, peeled and diced
4 cups water
3/4 tsp celery salt
1/2 tsp black pepper
1/4 tsp garlic salt
2 cups milk
8 oz. cream cheese, cubed
1 can (10 3/4 oz) cream of celery soup
8 oz diced ham
Cook celery, onion, carrot and butter in 4-quart Dutch oven over medium heat until vegetables are tender (about 5 minutes). Increase heat and add potatoes, water, celery salt, pepper and garlic salt. Bring to a boil; reduce heat to medium and cook until potatoes are almost tender (about 15 minutes). Add milk, cream cheese, soup and ham. Simmer over low heat for 10-15 minutes until potatoes are tender. Stir occasionally.
