Creamy Lentil Soup with Sausage

This lentil soup is just yummy, hearty comfort food that is good for the soul! Enjoy!

1 cup green lentils
4 cups chicken stock (substitute water for vegetarian diets)
2 carrots, roughly chopped
2 celery stalks, roughly chopped
1 onion, roughly chopped
1 bay leaf
2 fresh thyme sprigs
Salt and pepper to taste
3 tablespoons olive oil
1/4 lb. thinly sliced sausage (there are plenty of vegetarian sausage options out there too!)
1 baguette or some other crusty bread cut into thin slices (at least 3 per person)
