Creamy Succotash with Crispy Fried Onions

A creamy sweet succotash is topped with crispy fried onions for an over the top great meal!

Vegetable oil, enough to cover 2" in medium sized saucepan
1 onion (I used Vidalia)
2 Tbs. flour
2 tsp. salt, divided
1 tsp. pepper, divided
1 Tbs. butter
1 clove garlic, minced
1 1/2 c. frozen lima beans, thawed
1 1/2 c. frozen corn (I used a combination of yellow and white), thawed
1 c. cooked ham, diced
1/4 c. heavy cream
1-2 Tbs. chopped fresh parsley (optional)
