Creamy Tomato and Spinach Pasta

This is one of my favorite weeknight meals! I find myself craving the homemade sauce in this pasta. It's tomato-y and creamy and has a tiny kick to it that always leaves me wanting seconds.

1 Tbsp olive oil
1 small onion, diced
2 cloves garlic
1 (15 oz.) can diced tomatoes or 2 large tomatoes, diced
½ tsp dried oregano
½ tsp dried basil
pinch red pepper flakes
1/4 tsp freshly ground pepper
½ tsp salt
2 1/2 Tbsp tomato paste
1/2 cup water
2 oz. cream cheese
¼ cup grated Parmesan
½ lb. bowtie or penne pasta
1 1/2 heaping cups of fresh spinach

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
