Crispy Chicken Salad with Waffles

Greens and veggies topped with crispy baked chicken stripps and sweet Belgian waffles. A spicy maple dressing is drizzled over top.

For the chicken:
3 large chicken breasts sliced into strips
1 cup buttermilk
¾ cup Wondra flour
¾ cup Panko bread crumbs
1 teaspoon poultry seasoning
1 teaspoon paprika
3 tablespoons butter, melted
For the salad
1 pound arugula
½ cup orange bell pepper, diced
1 cup cherry tomatoes
1 cup yellow cherry tomatoes
½ cucumber, sliced
4 Belgian waffles, chopped
For the dressing:
2 tablespoons maple syrup
2 tablespoons stone ground mustard
½ teaspoon pepper
½ teaspoon salt
1 cup olive oil
Hot sauce to taste
