Crock Pot Chicken Pot Pie

Make the filling for this pot pie in the crock pot, then serve it with mini pie crusts or hot biscuits. A family favorite!

4-5 potatoes, peeled or scrubbed, then diced
3-4 cups baby carrots, halved
1 onion, diced
2 cloves garlic, minced
1/2- 1 tsp salt
1/4-1/2 tsp pepper
4 boneless skinless chicken breasts, cubed
2 cans cream of chicken soup
1-2 cups frozen peas
Biscuits, toast, or pie crust
3-4 cups baby carrots, halved
