Crock Pot Pork Jambalaya

Slow cooked pork with rice and tomatoes

1lb pork loin
8oz V8
2 c chicken broth
1/2 carrot sliced
1 shallot chopped
1 Tbsp italian seasoning
1 tsp pepper
1 15oz can tomatoes with chilis
1-2 c rice (see note)
Place frozen pork loin in crock pot. Add V8, seasonings and vegetables. Bring liquid up to top of pork loin. Simmer 3 hours. Add tomatoes with chilis and cook 30 minutes more. Add 1 c rice for every 2 c juice. Cook 40 minutes covered until rice is done.
