Here is a very easy & quick recipe for chicken salad. Thanks to the crockpot there is hardly any prep time. This quick throw together chicken salad is a great way to change up the usual lunch routine.

2-3 lb boneless skinless chicken breast
3/4 C caesar salad dressing, more or less to taste
1/2 C parmesan cheese, shredded
2-3 green onions, chopped
Dash of salt & pepper

Cook chicken in crockpot for 4-5 hours on low until cooked through. Shred chicken & add caesar salad dressing, parmesan, salt, pepper & green onions.
