Soup really isn’t a summer meal, but luckily, our spring has been taking its sweet time producing lasting springtime affects, so it fits. Here in Wisconsin, we’ve been going back & forth between random life-giving summery days, dreary rainy showers & unwelcome slushy snowstorms, & it’s been a little disheartening. 3 chicken breasts
3 cloves of garlic, minced
1 1/2 cups onion, chopped
1 1/2 tsp chili powder
1 tsp cumin
1 1/2 tbsp lime juice
1 1/2 cups salsa
6 cups chicken broth
2 cups corn
2 cups black beans
optional toppings: tortilla chips, cheese, avocado, Greek yogurt or sour cream, cilantro, lime wedges (to juice), hot sauce, etc.
