Crunchy Hash Brown Casserole

Serve this casserole next time for breakfast or brunch. Sure to be a hit. Topped with crunchy potato chips. YUM! :)

½ cup butter, unsalted
1 white onion, chopped
1 (16-ounce) sour cream
1 (10.5) can cream of celery soup
1 (8-ounce) pkg. shredded cheddar cheese
1/2 teaspoon salt
½ teaspoon pepper
1 (30-ounce) package frozen shredded hash brown potatoes, thawed
2 ½ cups crushed potato chips

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
