These homemade chicken tenders are extra crispy and crunchy just like at a restaurant, but without the hassle and extra cost of eating out! They are perfect for a weeknight meal that everyone will love. Pair these with a simple honey mustard dipping sauce that comes together in just minutes!

2 lbs. chicken breasts, cut into strip or tenderloins
1 cup all-purpose flour
2 cups polenta
1 cup soy milk
1/2 cup coconut oil or vegetable oil
For Dipping Sauce:
1/4 cup honey
1/2 cup stone ground mustard
1 tablespoon maynnaise
