A Crust-less low- Carb, Gluten-free Bacon quiche made with Greek yogurt and fresh greens. Full of flavor and nutrition!

2 Cup chopped spinach, swiss chard or kale
1/2 Lb. diced bacon
7 eggs
1 Cup low fat milk
1 Cup non fat Greek yogurt
11/2 Cup shredded Cheese-(cheddar, pepper jack, Havarti or smoked gouda will all work)
1/2 Cup finely diced fresh pepper of your choice
1/2 Cup diced onion
2 cloves garlic minced
Recommended spices Thyme,. Italian seasonings,
1/2 Lb. diced bacon

•In a large skillet:
•Put the bacon and start it cooking, covered on medium heat.
•Dice the peppers, onions and garlic and put them in with the bacon and cook until done....
