Curried Orange Chicken Salad

This is a fresh, delicious chicken salad with curry and oranges. Celery and almonds add some crunch and raisins add some sweetness. This is a perfect salad for any get together this summer. This is an easy dish to prepare ahead of time. Just leave the almonds and oranges out until you are ready to serve. I hope you enjoy this one!

3 cups shredded cooked chicken breast
3 stalks finely chopped celery
½ cup raisins
¼ cup slivered almonds
? cup light mayonnaise
½ cup fat-free plain Greek yogurt
1 teaspoon finely shredded orange peel
2 tablespoons orange juice
1 tablespoon yellow curry paste
¼ teaspoon cracked black pepper
? teaspoon salt
12 lettuce leaves
3 oranges, peeled, sectioned, and seeded

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
