Dark Chocolate Amaretti Biscuits

My twist on the traditional soft Amaretti biscuit, with a hidden dark chocolate centre.

30g good quality dark chocolate
200g ground almonds
2 large egg whites (or 70g egg white if you’re using the cartons)
150g caster sugar
1 tbsp Amaretto liqueur
¼ tsp vanilla extract
For rolling the biscuits in prior to baking

3 tbsp caster sugar
1½ tbsp icing sugar
1½ tbsp cocoa powder
