Dawn's Crock Pot Beef Stew

This is an easy family favorite at our house! Just put it in the crock pot in the morning come dinner time you`'ll have a nice, filling meal perfect on a chilling evening.

1 - 1 1/2 lbs. Beef stew meat
4-5 large Idaho potatoes, peeled and cubed
2-3 large carrots, peeled and cut up
1-2 cups bell peppers diced (I used a bit of green, red, yellow and orange for the color)
1 onion cut up
2 cups beef broth
1 can cream of mushroom soup
1 jar beef gravy
Flour
Pepper
2 cups beef broth or water
Dredge the meat in the flour and fry in a skillet with a tbsp of oil till lightly browned, remove and set aside. Peel, prepare and chop up all of your veggies. Add the veggies and beef to your crock pot along with the remaining ingredients. Cook on low 6-7 hours, high, 3-4. I added a dab of butter to the bowl - yummy!

Red fufu with lamb chops and sautéed spinach is an unexpected recipe that is surprisingly delightful. I like my lamb chops well done. When it comes to searing meat, I keep it simple by seasoning with salt and pepper. The sauce is the ingredient that brings everything together.
