Decadent Double Chocolate Mousse Filled Cupcakes

If you need a cupcake for a special occasion then you have found your cupcake! This cupcake has a wonderful light chocolate cake with a dense full dark chocolate mousse filling. The sweet frosting balances out the dark chocolate. The perfect cupcake for a that special someone.

For the Cupcakes:
•3/4 cup unsweetened Dutch process cocoa powder
•3/4 cup hot water
•3 cups all-purpose flour
•1 teaspoon baking soda
•1 teaspoon baking powder
•1-1/4 teaspoons salt
•1-1/2 cups butter
•2-1/4 cups sugar
•4 eggs
•1 tablespoon vanilla extract
•1 cup sour cream

For the Mousse:
•2 tablespoons cocoa powder, (Ghirardelli)
•5 tablespoons hot water
•7 ounces, chopped fine bittersweet chocolate (Ghirardelli Bittersweet)
•1-1/2 cups cold heavy cream
•1 tablespoon sugar
•1/8 teaspoon salt

For the Marshmallow Butter Cream Frosting:
•7 ounces marshmallow fluff
•1 cup butter, softened
•1 teaspoon vanilla extract
•32 ounce confectioners' sugar
•4 to 5 tablespoons water
•food coloring (optional)
