Deep-Dish Hawaiian Sourdough Pizza

Tangy sourdough is the basis for this sweet and savory deep dish pizza. Don't worry! You can let the dough rise overnight in your fridge! You CAN make fresh pizza on a weeknight!!

1 cup unfed sourdough starter
2 cups unbleached, all-purpose flour
1/2 cup whole wheat flour
1/2 cup hot, tap water
1/2 teaspoon active instant yeast
1/2 teaspoon vital wheat gluten
1/2 teaspoon salt
1 teaspoon Pizza seasoning
1/2 cup crushed tomatoes
1/2 cup fat free mozzarella cheese
8 ounces lean ham, diced
1/2 cup pineapple chunks in juice, drained
1/2 cup red onion, thinly sliced
1/2 cup Italian four cheese blend
