Deep Fried Twice Baked Potatoes

The skins are deep fried for an extra crunch in the skins.

4 large russet potatoes
Potato insides
1 small red onion
1/2 cup bacon pieces
1/4 cup sour cream
1/4 cup cheddar cheese
salt and pepper to taste
Cut potatoes in half length-wise, and scoop out middle leaving 1/4 - 1/2 inch potato on skin. Place insides in a mixing bowl. Deep fry outside skins until golden brown (3 - 4 minutes) drain on paper towel....
