Delicious Homemade Apple Pie

When I got married I thought a lot of things would just happen, like I would turn into this wonderful chef and baker. Go ahead laugh, I still am, what the heck was I thinking? Maybe I was just dreaming and so was my hubby. I have however made huge strides over the almost 13 years of marriage. One of the few things that has become the request from my family is a homemade apple pie. The kicker is, all from scratch, no can filling, or no pre-made crust. Crust:
2 scant cups flour
1/8 teaspoon salt
1/2 generous cup canola oil
3 tablespoons water
Filling:
1/2 cup sugar
1/2 teaspoon ground cinnamon
dash of nutmeg
6 cups of thinly sliced apples (I usually use 5 or 6 med apples)
