Dijon Chicken

Scrumptious chicken done in a hurry. The smell alone will make you want to add this to your weekly rotation! Serve over rice, noodles or just by itself! Sometimes I use double the chicken and 3 times the sauce (just because it is so yummy). It makes fabulous leftovers if it lasts that long.

2 whole chicken breasts
1/2 cup dijon mustard
1/4 cup maple syrup
2 tablespoons rice vinegar
Mix all ingredients together, except chicken. Pour in the bottom of an 8 x 11 pan. Place chicken into sauce, then turn over to coat. Bake uncovered at 450 for 40 minutes. Turn chicken over halfway through...
