Dijon-Herb Chicken with Cocoa-Spiced Apples

You’ll have everyone agreeing that opposites do attract with this winning combination of sweet and savory, kissed with slimming cocoa powder!

2 large apples, cut into wedges
1 large onion, cut into wedges
2 tsp. unsweetened cocoa
1/4 tsp. nutmeg
2 Tbs. olive oil, divided
3 Tbs. Dijon mustard
2 cloves garlic, minced
2 Tbs. minced fresh herbs
1 Tbs. soy sauce
5 lb. oven-roasted chicken
1 cup low-sodium chicken broth
1 cup apple cider
1. Heat oven to 350°F. In bowl, toss first 4 ingredients and 1 Tbs. oil to coat. In separate bowl, mix mustard, next 3 ingredients and 1 Tbs. oil; reserve half. 2. Season chicken with salt and pepper; brush with 1/2 Dijon mixture. Place in roasting pan. Roast 1 hr. or until done, adding apple mixture after 30 min.; transfer to platter. 3. Strain pan juices into saucepot; skim fat. Add broth, cider and reserved Dijon mixture. Boil 5 min. or until reduced to 1 cup. Serve with chicken.
