Dirty Rice with Beans & Andouille Sausage

This dish is so filling with the rice, beans and veggies. The leftovers heated well and the addition of few splashes of Frank\\\'s Hot Sauce made it over the top amazing! You can find vegan Andouille Sausages by Tofurky at most well stocked stores.
1 package Tofurky Andouille Sausage, sliced into coins (1/4-1/2\" thick)
1 1/2 cups Jasmine rice
1 1/2 cups water
1 1/2 cup vegetable broth
1 tablespoon olive oil
1 medium yellow onion, diced
1 medium yellow bell pepper, chopped
1 medium red bell pepper, chopped
4 ribs celery, diced
3 cloves garlic, minced
2 teaspoons dried thyme
1 (16 ounce) can Dark Red Kidney Beans, drained and rinsed
4 green onions, thinly sliced
salt and pepper, to taste
1 1/2 cups Jasmine rice
1 1/2 cups water
1 1/2 cup vegetable broth
1 tablespoon olive oil
1 medium yellow onion, diced
1 medium yellow bell pepper, chopped
1 medium red bell pepper, chopped
4 ribs celery, diced
3 cloves garlic, minced
2 teaspoons dried thyme
1 (16 ounce) can Dark Red Kidney Beans, drained and rinsed
4 green onions, thinly sliced
salt and pepper, to taste
