Double Chocolate Peanut Butter Cookies

These cookies are delicious! Be careful not too cook too long - they overcook pretty easily. The dough is also fairly stiff. I think next time I make them I am going to melt some milk chocolate and mix that in as well. It will make them Triple Chocolate Cookies and make them a little less stiff. Yum!

1/2 cup salted butter, softened
1/2 cup peanut butter
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
1 1/2 cups flour
1/2 cup baking cocoa
3/4 tsp. baking soda
1 1/2 cups chocolate chips

Mix butter and peanut butter until smooth. Stir in sugar. Add eggs and vanilla. I never measure my vanilla - a little more only makes it better! Mix in flour, cocoa, and baking soda until well combined. Add in chocolate chips. Drop dough onto cookie sheet. I used parchment paper on my cookie sheets, but you don't have to. Use tines of a fork to make criss-cross pattern on tops. Bake at 350 degrees 10-11 minutes. Cookies should be a little gooey in the middle - they will set up more as they cool.
