Hearty beef and bean chili with a Dr Pepper base. Perfect for feeding a crowd on game day!

1.5-2 pound beef chuck roast
1-2 tablespoons vegetable oil
1 medium onion, diced
1 red pepper, chopped
1 jalapeno pepper, seeded and diced
3 cloves garlic, minced
1-2 cans Dr Pepper
1 (28 oz.) can crushed tomatoes
1 (14.5 oz.) can diced tomatoes
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/2 teaspoon pepper
1 (15 oz.) can pinto beans, rinsed and drained
1 (15 oz.) can kidney beans, rinsed and drained
1/4 cup cornmeal
1-2 tablespoons vegetable oil

Cut roast into bite-size pieces. Heat one tablespoon oil in a large skillet over medium-high heat. Sear the meat on all sides, being careful not do crowd the pan, working in batches if necessary.
