Dry-Rubbed Pulled Pork

Use a dry rub on your pork to really give it a lot of flavor, and it makes a delicious sauce to serve on the finished product!

2 1/2 lb. pork butt (shoulder)
1 tablespoon brown sugar
1 teaspoon crushed red pepper
1 1/2 teaspoons paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground mustard
1/4 teaspoon chili powder
1/4 cup cider vinegar
1/2 cup water
1 tablespoom ketchup

Sauce:
1 cup ketchup
1/4 cup brown sugar
2 teaspoon paprika
1 teaspoon chili powder
1 1/2 cups cider vinegar
Combine everything but the pork, vinegar, water, and ketchup in a bowl. Rub the spice over all sides of the pork. Place the pork in a slow cooker that has been sprayed with non-stick spray. In the bowl stir together the cider vinegar, water, and ketchup. Pour over the pork in the slow cooker. Cover with lid and set on low for 8 hours. After 8 hours, remove the lid from the slow cooker, and using tongs and a wooden spoon remove the pork and place onto a serving plate or large bowl. The pork should shred by itself when you pull it out, I used the spoon to support the pork when removing it from the slow cooker. In a bowl combine the ingredients for the sauce and pour over the shredded pork. Serve on large kaiser rolls.
