Easier Overnight Steel Cut Oats

This overnight preparation for steel cut oats lets you cut the cooking time down by giving them a quick boil and then a soak overnight. I've suggested a little vanilla, sugar, and spices for the oats, but you could toss whatever toppings you like in with the oats.

1 c. steel-cut oats
pinch salt
1 c. milk
1/2 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
turbinado (raw) sugar
1 c. steel-cut oats
pinch salt

In a large saucepan, bring water to boil.
Add oats and salt, and boil the oats for 1 minute.
