Easy Cheesecake

I don't remember where I got this recipe, but it's been a favorite for a long time. It only has 6 ingredients and it tastes light and lemony. It's a quick and easy dessert to make and share.

1 8 oz brick of cream cheese
1 14 oz can of sweetened condensed milk
1/3 C lemon juice
1 tsp vanilla
1 6 oz pre-made graham cracker pie crust
1 21 oz can of pie filling
You will want to bring your cream cheese to room temperature for it to mix well, without being chunky (also, avoid using the less fat cream cheese - the cheesecake will not set up). Add the first four ingredients (cream cheese, sweetened condensed milk, lemon juice and vanilla) together and mix until smooth. Remove the plastic covering from the pie crust and pour the mixture into the crust. Let the pie set up in the fridge for 3-4 hours prior to eating. Top it with your favorite pie filling or jam.
