Easy Homemade Sushi

Fill with whatever you want: avocado, crab, asparagus, sweet potato....

2 sheets Nori
1/3 cup sushi rice, uncooked
1 tbsp. mustard (good quality)
1 sweet potato, baked and skin removed
2oz imitation crab meat
Pickled ginger
Soy sauce
Bake sweet potato until soft. Cut the crab meat into little strips. Cook sushi rice according to package directions. Spread half the cooked rice on each sheet of Nori, leaving about 1/2" clear at the top of the sheet. Squeeze a strip of mustard along the rice about 1/2" from the bottom of the sheet. Place the sweet potato along the mustard strip on the first sheet, and place the crab meat pieces along the mustard strip of the other sheet. Tightly roll the Nori sheets around the filling, beginning at the bottom edge nearest to filling. Slice rolls into six pieces each. Turn cut side up and place on serving dish. Serve with pickled ginger and soy sauce. *Substitute your favorite fillings! *Serve with wasabi or any other condiment of choice!
