Easy Microwave Coconut Cream Pie

A traditional coconut pie made quicker in the microwave. The meringue part is still finished in the oven, but this will be your go to recipe for the filling!

Two pie crusts, baked
2cups sugar
2/3 cups cornstarch
1/4 tsp salt
4 cups milk
8 egg yolks (save egg whites for meringue)
4 tablespoons butter
2 tsps vanilla
2 cups coconut + a little extra for the top
