Easy Pepper Steak

COOK: 1 hour, 30 minutes MAKES: 6 to 8 Servings

1 pound Sirloin Steak, slice thin strips
1 Tablespoon Olive Oil
2 Garlic Cloves, mince
8 Scallions, slice 1 in. length pieces
2 Cup Beef Broth
1 Green Pepper, seed and cut in strips
1 Red Pepper, seed and cut in strips
2 Tomatoes, quarter or 16 oz. can Tomatoes, drain
1/4 Cup Light Soy Sauce
1 Tablespoon Cornstarch
Brown Steak in Oil about 3 to 5 minutes, add Garlic and Scallions. Add Beef Broth. Simmer covered 1 hour. Add Peppers and Tomatoes, cover and simmer 30 minutes more. Bring to a boil. Mix Soy Sauce and Cornstarch. Stir into mixture until thickened. Serve with Cooked Rice and Crispy Noodles.
