Edamame is a versatile little legume, and chocked full of protein, fiber and vitamins/minerals. It makes a tasty and unique hummus.

2 cups shelled edamame, cooked in salted water
1 garlic clove, smashed
2 tablespoons red wine vinegar
1 tablespoon low-sodium soy sauce
1/4 teaspoon salt
2-3 dashes Sriracha (Asian hot sauce)
1/2 cup extra virgin olive oil
