Egg Boats
An easy way to enjoy a weekend breakfast or weeknight dinner. A hulled out roll filled and baked with your favorite omelette ingredients.

2 tablespoons of olive oil
1/2 medium onion finely diced
1/2 green pepper finely diced
1/2 cup of canadian bacon small cubes
1/3 cup of heavy cream or milk
6 eggs or 1.5 cups of egg beaters
3/4 cup shredded cheddar or your favorite cheese
salt and pepper to taste
4 medium submarine sandwich rolls uncut
1/4 cup of shredded cheese for topping
