Egg-cellent Sausage Egg Roll for Brunch

When you thing "egg rolls", you think Chinese. But this isn't the case, here. It's baked egg stuffed with cheese and sausage, then rolled up.

4 oz. cream cheese, softened ( if you don’t have cream cheese, you can increase the milk to 1 cup)
¾ cup milk
2 Tbsp. flour
¼ tsp. salt
12 eggs
2 Tbsp. Dijon mustard or dijonaise
2¼ cups shredded cheddar cheese, divided
2 cups loose browned sausage/or finely chopped ham
½ cup diced onion
