Eggnog Cheesecake with Eggnog Whipped Cream

Divine eggnog cheesecake on top of a gingersnap crust, topped with eggnog whipped cream. This is something every eggnog lover must try!

2½ cups finely ground ginger snap cookies
8 Tbs unsalted butter, melted
4 (8oz) packages cream cheese, room temperature
¾ cup eggnog, room temperature
1? cup sugar
3 tsp vanilla extract
½ cup all-purpose flour
3 eggs, lightly beaten, room temperature
For the topping:
1 (8oz) package mascarpone cheese, room temperature
¼ cup confectioner's sugar
¼ cup plust 1 Tbs eggnog, room temperature
½ cup heavy whipping cream
